Gnocchi with Sausage and Tomatoes

Packaged gnocchi makes this quick weeknight dinner easy to get on the table. Because it cooks in just minutes, gnocchi is even faster than pasta, and tossing it in a quick sauté of sausage and juicy grape tomatoes makes a hearty meal. You can even use plant-based sausage in this for an herbivorous meal everyone will love.

Ingredients

  • 1 pound gnocchi (vacuum packed)
  • 2 tablespoons extra virgin olive oil
  • 12 ounces cooked sausage links (or meatless sausages)
  • 2 cloves garlic, sliced
  • 1 cup grape tomatoes
  • 2 ounces fresh spinach, chopped

Preparation

  1. Boil gnocchi according to package directions (about 2 to 3 minutes) and drain well. Reserve.
  2. In a large saute pan over medium heat, drizzle the olive oil, then saute sausage, garlic and tomatoes. When the sausage is browned and the tomatoes are soft, add the gnocchi and cook for a couple of minutes. When the gnocchi is heated through and brown in spots, stir in spinach. Turn in the pan until the spinach is wilted, then serve immediately.

Serving Suggestions

Serve as a one-bowl meal or add a simple green salad and garlic bread.
